COVID-19 Pandemic gave me time to cook

It's been 3 months since the COVID-19 pandemic was declared. Everyone's routine was changed abruptly. I was given an opportunity to work at home. I must admit that at first, it took me some time to adjust to the "new normal". Since I don't travel to work/home, it gave me time to prepare meals. I do the shopping & preparing the meal during the weekends so that on weekdays, the food is ready to serve.  

Here are some of the meals that I have prepared for almost 3 months!


Whole grain pancake (President's Choice brand), scrambled eggs & strawberries.


Sunnyside up eggs, with toasted garlic bread and blueberry. I chopped some garlic and mixed it with Becel and added some chia seeds.


Chopsuey. I'm pretty sure you can Google this for the ingredients and preparation.


Pancit canton with pandesal. The "panaderia" (bakery) is just our neighbor and you can buy the pandesal freshly baked!

The famous Filipino barbecue on stick! Marinate the work with soy sauce, vinegar, sugar and spices and these will be ready to grill in no time!


Still some barbecues but I grilled some sweet corn (wrapped them in aluminum foil with butter) and made some salsa.


Tuna omelet with carrots, onion, garlic & celery. 




Instead of fish and chips why not fish and spring rolls.

Misua. Instead of frying or putting the meatballs in the oven, why not put them in a soup.

Spring rolls again!

Green mangoes with shrimp paste. I didn't cook this but this is a classic Filipino snack.

Garlic fried rice with spinach, homemade longganisa & scrambled eggs.
